Chilly days are already here in Indiana. What is your favorite soup to fix?
I fix about a half dozen soups through the winter but I like beef vegetable soup the best. Sometimes I use stew meat and other times I use hamburger. I'm going to have to fix some this week end. Yum, Yum......
The mister's favorite is Hodge Podge. So easy to fix. Just brown 1.5 lbs hamburger with 1 diced onion. Dump in the Crock Pot along with 3 cans Campbell's Minestrone Soup and 2 cans Rotel. Since Dean is the chief cook now, we've been having this quite often:)
This week has been in the 50's & I'm so cold....last Friday was 80's. I love to make New England Clam Chowder, potato/celery soup, beef stew & chicken vegetable....in that order
I make veggie soup with orgnaic fresh veggies, Trader Joe's lo sodium chicken broth, some herbs, brown rice pasta and let it cook for several hours. I need to have the veggies still on the cripsy side to get all of the nutrition. I use carrots, celery, broccoli, kale, spinach, cauliflowrer, the three clors of peper, and onions. Might put in some garlic if on hand. I use tumeric, rosemary, ginger, sage, parsley flakes, No salt.
I really like tomato based veggie soups the best. However, I tend to make turkey noodle soup most often with left over turkey carcasses from holiday dinners.
